cookie carnival :: october round-up!

it's carnival time again!

for october, we made MINI-PUMPKIN WHOOPIE pies! yes! they were my attempt at something autumnal and maybe even a fun halloween party treat. the recipe comes fom Martha and i'll give you the link here, rather than posting the recipe myself. i highly recommend you go and check out her video demo as COOKIE MONSTER himself is her guest. and he rocks. of course.

i have to say, i enjoyed these cookies a lot, but had some issues with them. i found the pumpkin aspect to be sort of. . . token. there's just not enough pumpkin flavor. i added some more to it, but i still didn't feel it packed enough of a pumpkin punch. i couldn't go too far, because i knew the filling would become runny, sooooo.... i think i would prefer a different flavor filling. as otheres felt as well. that being said, the cookie part was AWESOME! it was so tasty and cakey and sort of devil's foodie. awesome. i think others agreed with me on that.
