cookie carnival :: may challenge!

hey y'all, it's cookie time!

for those of you waiting for the April round-up, holly is working on it and i'll let you know when it's up!

until then, behold the delicious looking cookie for May. it's a HAZELNUT MACAROON SANDWICH COOKIE from williams-sonoma and don't they look lovely and dainty and perfect for a springtime tea party? (or in my case a school bake sale held at a garden shop).

i've put a pdf of the recipe here for the downloading. my hope is that this makes it easier for everyone to have and to print.

I just made a lemon lime macaron! These will be so much fun.

And don't be intimidated. I was afraid for a very long time and finally took the plunge - so worth it.

ok after reading the recipe, I have some questions.

-What is super fine sugar?

-I'll use almond meal, do I use 2 C?
or do they mean like 2 C almonds before grinding? (does that make sense volume wise?)

-Are we allowed to cheat and use Nutella for the filling, since it's hazelnut? lol

Superfine = caster sugar = the grade that's finer than the stuff you shove in your coffee/tea

Confectioners = icing sugar = dust

Just made mine as I'm out and about all month and they are sooo yummy sandwiched with peanut butter!!

I just printed the recipe and can't wait to make them. I recently received some filberts and have never made macaroons before. This will be a fun challenge for me !

I made them, and while they were very yummy, it was quite the comedy of errors in my kitchen this morning LOL I'll get them posted, can't wait to see how everyone else does ;)
